White Christmas Bites

This is a bite size version of a Christmas favourite, easily altered to suit your own taste buds and perfect for little fingers to help make and package up as a small gift for Christmas…

Ingredients

To make 24 of these you will need…

  • 1/3 cup mixed dried fruit
  • 1/2 cup desiccated coconut
  • 1 cup of puffed rice cereal
  • 1/3 cup glace cherries (halved)
  • 100g turkish delight
  • 400g white chocolate (roughly chopped)

Line two 12-hole mini muffin pans with paper cases (green and red obviously team with the theme of Christmas).

Chop the Turkish Delight into rough 1cm sized pieces.

In a mixing bowl toss together the turkish delight, dried fruit, coconut, puffed rice and cherries until well combined.

Place the white chocolate in a metal bowl or heat-proof bowl and place over another bowl or pan of boiled water (the water only needs to heat the bowl – it doesn’t need to touch it). Keep stirring the chocolate until it melts. Be careful not to let any water or steam get into the chocolate, as it will cause the chocolate to seize up.

Whilst keeping the chocolate over the heat, mix in the fruit mix and stir until well combined. Working quickly, spoon mixture evenly into paper cases and then leave them aside to set.
