Marbled Chocolate Cheesecake Slice

This Cheesecake Slice is really easy to make but looks quite impressive.

Ingredients

  • 250g plain biscuits
  • 125g butter, melted
  • 500g cream cheese, softened
  • 170g (2/3 cup) caster (superfine) sugar
  • 3 eggs
  • 90g white chocolate, melted
  • 100g dark chocolate, melted

Method

Preheat oven to 180°C. Grease an 18cm x 28cm (base) slice pan. Line base and sides with baking paper.

Process biscuits until finely chopped and then add butter. Process until just combined. Press over base of prepared pan. Refrigerate for 10 minutes or until firm.

Meanwhile, using an electric mixer, beat cream cheese and sugar until light and fluffy. Add eggs, one at a time, beating to combine. Transfer half the mixture to another bowl.

Stir cooled melted white chocolate into one mixture. Stir cooled melted dark chocolate into remaining mixture. Make sure you let the chocolate cool before adding it to the cream cheese mixture. Spoon mixtures, alternating, over base. Run a skewer through mixture to create a marbled effect.

Bake for 20 minutes or until centre of cheesecake is just firm to touch. Cool. Cover. Refrigerate overnight. Cut into squares and try not to devour them all in one session.
