Chocolate Tiramisu Recipe

To make this chocolate tiramisu you will need:

Ingredients

  • 30g cocoa powder
  • 250ml boiled water
  • 100g dark chocolate, roughly chopped
  • 250g mascarpone
  • 300ml thickened cream
  • 250g sponge fingers (also known as savoiardi and ladyfinger)
  • 100g milk chocolate, grated

Method

In a small bowl, dissolve cocoa in boiling water. Set aside to cool.

Place the dark chocolate in a heatproof bowl that fits snuggly over a saucepan (this stops water spraying into the chocolate). Half-fill the saucepan with water and bring to a simmer. Place the bowl on top, making sure it doesn’t touch the water (or it will overheat).

Stir chocolate with a metal spoon until melted. Remove from the heat and set chocolate aside to slightly cool (but not set).

In a medium mixing bowl, whip cream until soft peaks form. Set aside.

Transfer cooled melted dark chocolate into a large mixing bowl and whisk in a spoonful of mascarpone until smooth. Gradually whisk in remaining mascarpone until well combined.

Gently fold the cream through the mascarpone mixture until well combined.

Dip the sponge fingers one at a time into the cocoa mixture and arrange them over the base of a serving dish. Spread a thin layer of the mascarpone mixture over the fingers then sprinkle with a small amount of the grated milk chocolate. Repeat layers to fill the serving dish. Sprinkle the top with the last of the grated chocolate.

Chill for at least 4 hours. Serve with a dusting of cocoa powder if desired and enjoy!
