Chocolate & Cola Cupcakes

Ingredients (makes 12):

For The Cola Ganache

  • 200ml cream
  • 50ml cola syrup (cordial or soda stream), optional
  • 150g white chocolate, roughly chopped
  • 100g dark chocolate, roughly chopped

For The Cola Cupcakes

  • 200g unsalted butter
  • 200ml cola soft drink
  • 250g self raising flour
  • 1sp baking powder
  • 50g cocoa powder
  • 200g caster sugar
  • 2 eggs
  • 150ml milk

Method

To make the cola ganache

In a medium pan heat the cream and cola syrup over medium heat. When the cream starts to boil, remove from heat. In a separate mixing bowl place the white and dark chocolate.

Pour the hot cream over the chocolate. Steadily stir until the chocolate melts. Set aside and allow to cool.

To make the cola cupcakes

Preheat the oven to 180°C (160°C fan-assisted). Grease and line a 12-hole cupcake tin with cupcake papers.

In a medium saucepan, place the butter and cola, heating it gently over a low heat until the butter is melted and the ingredients are well combined. Allow to cool.

Into a large bowl, sift the flour, cocoa powder and baking soda. Add the sugar and set aside.

In a separate bowl, mix the eggs and milk until well combined and set aside.

Pour the cola mixture into the dry ingredients, stir well with a wooden spoon, and then add the egg mixture, whisk until it is well combined. The mixture will be very runny.

Pour cupcake mixture into prepared pan, you will be able to fill the papers almost to the top as the cakes will not rise far. Bake for 15 – 20 minutes until a skewer comes out clean. Allow to cool.

Top each cupcake with a generous dollop of cola ganache (cute retro cola bottle lollies optional) and enjoy!
