Chocolate Chip Cornflake Cookies

Ingredients (makes 25)

  • 125g butter, chopped, softened
  • 150g caster sugar
  • 1 tsp vanilla extract
  • 150g self-raising flour
  • 1 tbs milk
  • 45g cornflakes
  • 100g milk chocolate bits

Method

Preheat the oven to 180°C (160°C fan-assisted). Line two baking trays with baking paper.

Using an electric mixer – cream butter, sugar and vanilla in a bowl until pale and creamy.

Add flour and mix on a low speed until just combined. Add milk and stir using a wooden spoon until combined.

Add cornflakes and chocolate to the mixture and mix well until combined, you’ll probably need to get your hands dirty for this bit.

Roll tablespoonfuls of the mixture into balls. Place onto the tray, allowing room for them to spread (they should double in diameter while cooking). Flatten balls slightly with a spatula.

Bake cookies for 10 minutes or until light golden. Allow to cool and then enjoy!
