White Chocolate Cupcakes

These White Chocolate Cupcakes make a cute and yummy base for the creative types or are just as sweet in their own right…

Ingredients

To make 12 of these you will need…

  • 100g butter, softened
  • ¾ cup caster sugar
  • 2 eggs
  • 1⅓ cups plain flour
  • 1 teaspoon baking powder
  • ½ cup milk, warmed slightly
  • 100g white chocolate, melted

To make one batch of white chocolate fudge icing you will need…

  • 70g butter
  • 250g white chocolate
  • ½ cup pouring cream

Method

Preheat oven to 160°C. Place the butter and sugar into a bowl and with an electric mixer beat until light and creamy.

Gradually add the eggs one at a time and beat well. Sift over flour and baking powder and beat until combined. Fold through the milk and chocolate.

Spoon the mixture into twelve 1/2 cup capacity muffin tins lined with paper patty cases. Bake for 20 to 25 minutes. Cool on a wire rack.

To make the fudge icing, simply place the butter, chocolate and cream together in a heat proof bowl over a saucepan of simmering water. Stir until melted and smooth.

Remove from the heat and set aside to cool. Once cooled, beat with electric beaters until thick and fluffy.

Spread each cupcake generously with the white chocolate fudge icing and try not to eat them all at once. Some ideas for decorating the top – fresh berries and icing sugar, chocolate shavings, chocolate coated coffee beans… How would you decorate yours?

    Looks & sounds delish!! Even though I rarely purchase white chocolate, this recipe is excellent. Being a baker for countless years, the ingredients are few, but great. Quality+fresh is important. Altogether, they produce a wonderful tasting desert. Not too much white sugar! 3/4 cup isn’t that terrible for a dozen cupcakes. Just think, bakeries sell cc’s for $3.25 each! Maybe a bit more in some places. One can bake the entire batch for less than $10 bucks. I can!

    what a delicious cupcakes!!! Made them today and abolutely loved them. So did my friend who popped in for a cup of cappuccino.
    Just one question to be more pricise – how much is 3/4 cup of sugar in grams or ml for cream/milk as my icing was a bit runny? what is a cup size in grams/ml? thank you very much

    I made them yesterday and they turned out very yummy! However, it would be easier if you had the recipe either completely in cup measurements or all in metric measurements.

      I totes agree, when I read this recipie, it was a bit of an AWKWARD TURTLEEE moment, awkiiies :/
      But when got over my little moment, and I actually made them, ZOMG they were luscious and delish!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
