Easy Chocolate Fudge

Ingredients

  • 395g can sweetened condensed milk
  • 1 cup firmly packed brown sugar
  • 100g unsalted butter, chopped
  • 200g dark chocolate, chopped

Method

Grease and line a 21x11cm loaf pan extending paper on long sides to create handles.

Place the condensed milk, brown sugar and butter in a medium saucepan. Cook and stir over a low heat for 3-4 minutes until butter has melted, sugar has dissolved and it is well combined.

Add the chopped dark chocolate and cook and stir for a further 3-4 minutes until chocolate has melted and mixture is smooth. Pour fudge mix into prepared pan.

This is the part where you can get creative with the flavour. Some ideas…

Peppermint Fudge
Sprinkle a roughly chopped Peppermint Crisp or Mint Aero bar evenly over the fudge mix in the pan.

Marble Fudge
Make a small batch of White Chocolate Ganache by placing 50g of white chocolate and 1/4 cup of thickened cream in a medium heatproof bowl over a medium saucepan half-filled with simmering water (make sure the bowl doesn’t touch the water). Use a metal spoon to stir occasionally until chocolate melts and mixture is smooth. Pour mixture over fudge mix in pan in a swirly motion and tap pan to ensure smooth top.

Cherry Fudge
Sprinkle a roughly chopped Cadbury Cherry Ripe bar evenly over the fudge mix in the pan.

Coconut Fudge
Sprinkle 1/2 cup of desiccated coconut evenly over the fudge mix in the pan.

Chocolate Chip Fudge
Sprinkle 1/2 cup of chocolate chips (dark, milk, white or a mixture) evenly over the fudge mix in the pan.

There are so many variations you can create to suit your own tastes, but you can of course keep things simple and have just the plain chocolate fudge.

Once you have topped your fudge mix (or left it plain), cover the pan with plastic food wrap and chill for over 4 hours until set. Serve by cutting into pieces.

  7. I have a question. Can you freeze this fudge, and if so, for how long?

    How much sugar is needed? A ‘tightly packed cup’ is a bit vague, and doesn’t tell me if I need to buy more :-/ And also means I can’t substitute other types of sugar. Otherwise, sounds good.

  9. Because Brown Sugar can be pressed tight or remain light and fluffy you need to keep pressing it down into the 1 cup measure until it is tightly compacted.

    Mine did not firm up enough! It’s more like a thick ganache 🙁 Maybe I did not heat it enough ? Suggestions please. I placed it in the freezer so it may firm up but definitely not the way to go. Worst case, it will make a nice rich frosting.

    an i use a mirowave to do this ?

      I haven’t tried using a microwave… But I’d suggest it wouldn’t work as it would be too hard to control the sugar and milk mixture so that the sugar dissolves.

    This doesn’t set properly. Judging by the comments I’m guessing squidgy and moldable is what recipe is going for. Disappointed that it’s not set like English fudge or tablet! But maybe that’s what American fudge is supposed to be like.
