Easy Chocolate Brownies

One of my favourite recipes, this Chocolate Brownies recipe is easy. Do let us know if you make these and if you’d like to see more recipes!

To make twelve of these decent sized chocolate brownies you will need:

  • 140g unsalted butter
  • 200g dark chocolate
  • 200g light muscovado sugar or brown sugar
  • 2 tsp vanilla extract
  • Pinch of salt
  • 3 eggs
  • 85g plain flour
  • 75g walnuts, lightly toasted, chopped
  • Sifted cocoa powder or icing sugar, to dust

Method

Preheat the oven to 160°C. Grease and line the base of an 18cm square cake pan. Place the butter and chocolate in a heatproof bowl over a pan of simmering water (don’t let the bowl touch water). When butter and chocolate have melted – making a gorgeously shiny smooth mix – remove from heat and allow to cool slightly.

Beat with a wooden spoon the sugar, vanilla and a good pinch of salt into the chocolate/butter mixture. Beat in the eggs one at a time, beating well after each addition, and then add flour, beating until smooth. Now you should have a thick, rich looking mix that makes you want to eat it straight from the bowl. But don’t do that.

Fold in the walnuts and pour the thick, rich mixture into the pan, smoothing the top. Bake for 40 minutes or until a skewer comes out with a few moist crumbs attached (not sticky batter). Allow to cool, then turn onto a wire rack and peel off lining paper. Eat straight from the tin with a spoon… Or cut into 12 neat squares and dust with cocoa powder or icing sugar before serving… Or Ice Cream or Whipped Cream…

These Brownies will keep for 2-3 days in an airtight container in the fridge or they can be frozen for up to 2 months – if they will last that long. This is a pretty hardy recipe – one that you can experiment with to suit your own taste buds – leave out the walnuts – add in dried cranberries or white chocolate chips or hazelnuts or milk chocolate chunks or coffee beans or I could go on forever.

But what suits my taste buds you ask? On my second go at this recipe, I went for Lindt Excellence 70% Dark Chocolate to make a wicked Brownie mix and replaced the nuts with cut up chunks of Lindt Excellence Coffee Intense – mmm…

    Made this recipe, with a couple of adjustments (didn’t have enough dark choc so made up difference with little bit of milk choc). Added choc chips instead of nuts as family don’t like them. Made cake, such a success hubby took me shopping next day to buy more ingredients and is now a family favourite.

    Definately more recipes please, this was the perfect template to adjust to suit personal/family tastes

    Fantastic recipe! Just made it, using Whittakers 72% extra dark (Whittakers is one of the best things about living in NZ), and a punnet of raspberries instead of the walnuts. I also added fragments of Lindt Excellence Chilli Intense (about a third of a bar, beaten into pieces with a rolling pin – excellent stress-relief after a tough week), but couldn’t really taste the chilli in the piece I had. Maybe in the next piece, but I’d probably better not have another until after dinner!

  14. This looks really tasty and im going to make it right now, however i only have milk chocolate so im going to use that and see how that turns out.I love brownies but have never been able to get them right and always resorted to packets now im going to give them another try fingers crossed

    Great recipe, was “googling” for a recipe that required least amounts of flour as I only had a tiny bit left and found this. Easy to follow and came out brilliantly. I folded in mini marshmallows instead of nuts – a very decadent sticky treat!!!

      well egg is just used as a bonding agent so anything particularly runny and gooey will do the trick,i like to use syrup as a sub when i cook for my vegan friend although it didnt go to well as it did make the cake ( i cooked cake with it) a lot sweeter, but use anything of the kind really as long as it wont affect the taste too much:)

    OMG, That was amazing!!!! I have printed the recipe and am definately gonna use it again. I have had many ”baking adventures” so far but……….lets just say they did’nt really turn out well. But this was really good!!!

      Maybe u shudnt hav eaten them all at once! Just made them and my husband and i luv this recipe. Didnt hav any vanilla so just left it out. Choc I used was only 5o% cocoa dark choc instead of more bitter one. Perhaps this made a difference? Either way, its a new favourite! X

    Made these myself recently, can be a bit sickening with a lot of plain chocolate, if you find this yourself you can replace with coco, and just add chocolate chunks

    Made these just now, the batter was so yummy i can imagine the brownies will too. substitued vanilla essence for flavouring which should do the same thing, half of the batter i added some orange flavouring instead of vanilla and some orange zest… amazing

    I made these last week and now have another batch in the oven.

    I didn’t quite follow the recipe though …

    I halved everything due to not having enough chocolate (and also because I don’t have much willpower, so wanted to lessen the amount of temptation). Halving the ingredients got a bit tricky with the eggs but I managed with weighing scales and some basic maths!

    I missed out the vanilla altogether and instead of walnuts, folded in a fruit and nut mix. The cherries in this worked brilliantly as they plumped up and added a sweet/sour kick. As I’m a fruit and nut fan, I put in just over twice the amount the recipe calls for, which does make the finished article fall apart more easily than I guess it would if there wasn’t as much added stuff – but the taste is well worth it.

    This is a great basic recipe which can be adapted really easily – bookmarked! 🙂

    • This is exactly what i did, i used glace cherries instead of nuts and that tho and halfed the ingridents because i only had 100g of chocolate not 200g

    i plan to make the brownies this weekend. However, i would like to use a 9x13in pan. Do i double the ingredients? Because if i follow the above then i’d have a thin brownie if spread on a 9×13. I want a thicker one. Like 2 inch thick. Thanks!

  38. i tried this and it tastes really nice the pictures make you want to taste it straight away. Its really easy to make and it will be ready and cooked in a few minutes.

  42. Tied these with both Lindt and also a batch with economy Sainsburys dark chocolate- both turned out great although the Lindt were richer. Will be trying this with white chocolate next – yummy!

  43. I’m doing this now, they’re in the oven but i halfed all the ingridents so i make 6! i didnt know how to half the eggs so i used 1 and a half egg, im really scared they wont come out good !

    I have made these brownies and I loved them. I am tempted to add some raspberries for a twist and wonder if anyone has tried this. Also, I am not sure whether frozen or fresh raspberries would work better.
