Chocolate Shortbread

This chocolate shortbread recipe is delicious and easy to make.

Ingredients

To make 12 of these you will need:

  • 300g unsalted butter, at room temperature
  • 220g (1 cup) caster sugar
  • 375g (2 1/2 cups) plain flour
  • 5 tbs cocoa powder
  • 1/4 tsp bicarbonate of soda
  • Icing sugar, to dust

Method

Grease and line base and sides of a 18cm x 28cm lamington pan. Beat butter and sugar in a bowl with electric beaters until pale. Sift in flour, cocoa and soda and beat slowly until just combined. Spread in pan and smooth with a spatula. Prick all over with a fork. Chill for 15 minutes.

Preheat the oven to 180°C (160°C fan oven). Cook the shortbread for 25 minutes or until firm to touch. While it’s still hot, use a knife to score it into 12 rectangles. Cool slightly, then remove from pan and cut into 12 pieces. Dust the chocolate shortbread with icing sugar before serving.

    I’ve never made shortbread, apart from at school maybe, a long time ago! Followed the recipe to the letter and was a bit dubious about the consistency, i.e how very thick and almost unworkable it was, but I persevered. Had to cook a little longer than stated but came out an absolute treat! I’ll definitely make this again. Thanks for sharing.
