Chocolate Sandwich Cake Recipe

A simple recipe for a basic chocolate sandwich cake – you can’t go wrong with this one
Ingredients

For the cake


  • 125g/4oz milk chocolate
  • 225g/8oz soft margarine
  • 225g/8oz superfine caster sugar
  • 4 free-range eggs
  • 200g/7oz self raising flour
  • 30g/1oz cocoa powder
  • 2 teaspoons baking powder
  • 1 tablespoon milk


to decorate

  • 150ml/1/4 pint double cream
  • 2 teaspoons icing sugar
  • extra icing sugar for dusting


Method

Grease and line two 20cm/8inch sandwich tins.

Chop the milk chocolate into smallish rough pieces


Place the margarine, sugar and eggs into a bowl and then sift the flour, cocoa powder and baking powder into the bowl. Using an electric whisk, beat the mixture until creamy and paler in colour.

Beat in the milk and chocolate pieces.

Divide the mixture between the two tins and level the surfaces.

Bake in a pre heated oven at 170C/325F/gas mark 3 for 25-30 minutes until risen and just firm to the touch.

Transfer to a wire rack to cool.


To decorate the cake.

Whip the cream with the icing sugar and use to sandwich the cakes together. Dust and eat… erm, I mean serve.

Serves 10-12 (yeah right!)
