Chocolate Donuts

Every now and then, when school holidays are in session and my daughter is experiencing a rare lull between movies, playdates, sleepovers and outings, we like to cook. No surprises that most of my recipes feature chocolate. This makes 24 small donuts and aren’t too sinful.

Ingredients

  • 1 cup of plain flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup of caster sugar (fine white sugar)
  • 2 beaten eggs
  • 2 tablespoons olive oil
  • 1 teaspoon vanilla essence

Chocolate Icing

  • 1 cup of dark chocolate, roughly chopped
  • A bowl full of Sprinkles

Method

  1. Preheat your oven to 180C.
  2. Sift the flour, baking powder and salt into a large bowl and stir in the sugar.
In a separate bow, whisk together the eggs, milk, olive oil and vanilla. Add this to the dry ingredients and stir until smooth.
  3. Fill two twelve-hole mini-donut pans (or one, in two batches) with the mixture and bake for around 8 minutes or until cooked (test by inserting a skewer into the centre of one – it’s cooked if it comes out clean). Allow to cool, then turn out on to a rack or board to cool properly.
  4. Then, over a simmering pan of water, place a smaller saucepan with the chopped chocolate. Stir continuously until it is completely melted.
  5. Remove from the water and either dip or spread your donuts with the chocolate and coat with the sprinkles. Place in the refrigerator for a few minutes and then enjoy. These little babies are best enjoyed within a day or two of making. Big and little kids love them.

Where in the UK can you get those doughnut pans!

  2. inu

could you, instead of those pans, use a doughnut maker?

  3. I’m not sure where you can get the pans in the UK, but the brand on mine is ‘Baker’s Secret’ which I think are available everywhere.

Inu – I don’t know what a donut maker is. This mix is pretty much a chewier cake that you don’t have to deep fry, so a muffin tray with something inserted in the middle of each one is the next best thing perhaps.

I’m confused, in the ingredients there’s no milk mentioned – but it’s mentioned in step 2. How much should there be? I really want to try these they look fabulous!

I see that the recipe says to add milk, yet it is not listed under the ingredients.

This recipe omitted the milk amount..the instructions say add milk, the recipe doesnt list the amount..sounds like a good recipe if I knew how much milk to add! Thanks!

I put the milk and the oil in a 2 cup measuring cup then filled the rest with milk (2 cups liquid total). I also added an extra cup’ish of flour and Tbsp of BP – was enough sugar. I baked 1/2 (piped w/ piping bag onto parchment lined cookie sheet) and deep fried 1/2 (again, just piped out lines into the oil with a piping bag w/ no insert), then tossed in cinnamon sugar. We all LOVED the fried ones, and liked the baked ones – they’re not donuts or muffins or biscuits…but interesting and worth a shot. Good Luck
